Spicy Tomato Chicken

Chicken is versatile protein, if you ever happen to get a good chicken recipe, please stick with it. Today I made some spicy tomato chicken, with 3.5lbs of marinated chicken thighs, 50-60 mins of simmering( yes… 50-60 mins, don’t be scared, you won’t be overcooking the chicken thighs). Without further ado, let’s get cooking!

Yield: 4-6

Prep time: 2 hours

Cook time: 1hr 20 mins

Ingredients

– 3.5 lbs chicken thighs (quartered &marinated)

– 1 red onion(sliced)

– 1 white onion(sliced)

– 1 cup tomato purée

– 1 cup chicken broth

– 1 cup water

– 1.5 tbsp white pepper

– Salt & seasoning (to taste)

– Chilli flakes (to taste)

– Garlic & ginger paste

– 1/2 cup olive oil

-Rosemary for garnish

Preparation

Marinate chicken (with usual spices), sit in the refrigerator for 2 hours

In a large pot, brown chicken in olive oil

Set aside

In the same pot, add onions, garlic and ginger paste (fry till translucent)

Add tomato purée, chicken broth, white pepper, chili flakes

Add chicken back into the pot. Add water. Bring to a simmer. Cover and cook for about 50-60 minutes

Garnish with rosemary

Serve with rice, boiled plantains, potatoes or yams.
