Suya spice (or Yaji) is an authentic African (common amongst West African) spice used for meat marination. Suya spice is a peanut dry base rub used to marinate meats before grilling. Due to its popularity, suya spice is a necessity in most African homes. If you have nuts allergy… you might want to stay away from this recipe.
Ingredients
- 2 chicken breasts (deskinned)
- 1 white onion (diced)
- 1 tomato (deseeded and diced)
- 5-6 stems parsley (chopped)
- 4 tsp butter
- 4 tbsp Suya spice (unsalted and unseasoned, so as to be able to season to taste)
- Salt & Seasoning to taste
- A dash of sea salt
- 2 brioche buns
- 1/2 cup Mayonnaise
- Olive oil
Utensils
- Cast Iron Skillet
- Chopping Board
- Knife
- Standing/Hand Mixer
- Cooker
Wash chicken breast, slice vertically(leaving it open like a book)
Marinate with olive oil, salt and seasoning, 1 tbsp suya spice
Heat skillet and melt butter
Add 1 tbsp suya spice, stir and fry for 2 mins
Add chicken breast, cook both sides for about 20 mins
Toast bun in skillet for about 2 mins or less
In a bowl, add chopped parsley, onions and tomatoes
Drizzle olive oil, add a dash of salt, 1 tbsp suya spice
Mix well
In a small bowl add mayonnaise, 1 tbsp suya spice and mix well
Build burger (spread mayonnaise on bun, 1 tbsp parsley, onions, and tomatoes, chicken breast, extra mayonnaise, top bun)
Let cool, serve and enjoy.
