Hello foodies, this past week I took the time to make a simple, yet ravishing and well-flavored. Yam porridge is one of the foods I grew up eating as a Nigerian and I love every single memories attached to it. I remember how my mother would cook yam porridge that came with a lot of condiments such as; meat bits, fish, shrimps, and sometimes snails, every weekend for the whole family. So I was reminiscing these moments and I decided to modify this traditional recipe a little bit by adding another type of tuber; potato!!
Without further ado, let’s get cooking.
What you’ll need
3 cups yam (diced)
2 cups potatoes (diced)
2 cups shrimp
1 medium red bell pepper
1 small white onion
1 habanero
3 garlic cloves
1 ginger finger
1 1/2 cups red oil
1 cup water
Salt & seasoning (to taste)
A handful dry mint leaves (parsley, spinach or cilantro can be used as substitute)
Method
Blend peppers, onions, garlic and ginger coarsley, set aside.
Heat oil in a pot
Add blended pepper
Stir slightly and season
Stir in and cook for 3 mins
Add yam, add water, cook for 5 mins
Add potatoes , stir and cook for 10 mins
Check for softness and cook for 3 more mins
Mash up majority of yam and potatoes
Stir in shrimps
Cook for 3 mins
Stir in dry mint leaves and serve.
