First things first, happy late thanksgiving, I am hoping you had fun and lots to eat, also lots to take take home or keep. Before you end up getting tired of that leftover turkey, we would be revamping it into a new pot of stew ( yummy ). Today we would be using basic ingredients from our pantry such as: tomatoes, red bell peppers, yellow bell peppers, habanero peppers, amongst a few others. This stew is similar to the bukka stew I uploaded on my youtube channel months ago, but just with few tweaks.
Without further ado, lets get cooking!!!
6 medium tomatoes
4 large red bell pepper
1 large yellow bell pepper
6 habanero peppers (or just go with your spice level)
2 medium onions (red and white)
2 large smoked or grilled turkey wings
1-2 lbs parboiled beef
2 smoked whiting fish (you can also use smoked catfish)
6 hard boiled eggs (very optional)
3 tads of ground white pepper
2 tbsp salt
3 seasoning cubes
2 cups of oil
Water (very optional)
Prepping makes cooking easier and faster, once all ingredients have been prepped, it’s just a matter of pouring in and stirring.
Preheat oven to 375 degrees
Wash and cut all peppers, tomatoes and onions (save and chop half of a white onion)
Place in a baking pan (spread out)
Bake in the oven for about 15-20 mins
Blend oven baked peppers into a puree and set aside
Wash smoked fish and set aside.
In a pot, heat up oil, pour in chopped half onions and slightly fry
Add parboiled beef, and fry till both sides turn golden brown
Add pureed pepper, stir in. (to avoid splat and injury, have a splat screen ready or use really low it for this part)
Cover and cook on medium to low heat for about 10 mins.
Add in turkey wings, salt, white pepper, and seasoning cubes, stir in and bring to a boil for about 15 mins.
Add smoked fish, cover to cook for 10 mins (incase stew is getting dehydrated add a tad bit of water)
Turn of heat, gently stir, add in eggs and let sit for about 6-8 mins.
STEW IS READY!!!
You can serve with any accompaniment of your choice such as: Rice, Yam, Bread, e.t.c
